Friday Faves - Mexican Food!

This post makes me hungry every time I read it. Today for Friday faves, I am talking about my favorite food of all time, which is Mexican. Ice cold margaritas with the perfect cut of lime refreshing you on a warm summer day seems almost too good to be true right about now. Mexican food has so many flavors and if you are like me and love things hot, Mexican food can surely push you over the edge. Mexican is the perfect meal to cook whether you are having friends over or are cooking for yourself it is easy and fast. Here are two recipes that are quick and easy and will provide you with your perfect Mexican meal!

1) Strawberry Margaritas

Ingredients

– 2 cups crushed ice
– 1/2 cup strawberry puree (frozen can or fresh strawberries, pureed)
– 1 cup tequila
– 2 limes, juiced
– Splash Triple Sec
– Splash simple syrup (equal amounts sugar and water heated until sugar dissolves, then cooled)

Directions

Combine in a blender, ice, strawberry water, tequila, lime juice, Triple Sec and simple syrup. Puree until smooth. Pour into rocks glasses and serve.

2) Chicken Tacos

– 1 pound skinless, boneless chicken breast halves, cut into bite size pieces
– 1 cup lemonade
– 2 tablespoons olive oil
– 1 tablespoon lime juice
– 1 1/2 teaspoonsWorcestershire sauce
– 1/2 teaspoon garlic powder
– 1/2 teaspoon onion powder
– 1 bay leaf
– (12 ounce) package corn tortillas
– 1 head lettuce, shredded
– 2 large tomatoes, chopped
– 1 (8 ounce) package shredded sharp Cheddar cheese
– 1 (8 ounce) jar salsa
– 1 (8 ounce) container sour cream

Directions

1. In a large skillet over medium heat, combine chicken, lemonade, olive oil, lime juice, and Worcestershire sauce. Season with garlic powder, onion powder, and bay leaf. Simmer until chicken is no longer pink, and juices run clear, 15 to 20 minutes.

2. Meanwhile, warm the tortillas in the oven or microwave until soft. When chicken is fully cooked, transfer to serving bowl. Place lettuce, tomatoes, cheese, salsa, and sour cream in serving dishes. Each person can create their own wrap, using their preferred ingredients.

I haven’t done too much traveling but I have decided it is in my best interest to become a world traveler. My goal is to make it to all my dream places before I am 30. Among my very long list of travel hot spots, Ibiza lays at number one. Now to some of you this may seem typical of a young girl who loves music and beaches but for me it is more than that. Growing up in Vancouver I was accustomed to a typical straightforward lifestyle. By the time I could walk I knew I was destined for something greater, which in my head meant “get the hell out of Vancouver.”

Why Ibiza? Well it seems like my true definition of what heaven on earth would be: white sand beaches, crystal clear turquoise blue waters and a party that goes all night long. Plus, since it is the main hub for the best Electronic Dance Music in the world I think I would feel right at home. Laidback lifestyle, sunshine and the best music that the world has to offer seems like a good enough reason to hop on a plane and make my way to the dream island of Spain. You better believe the day I get there I will have a post and pictures for everyone to see.

We all live extremely busy lives. Sometimes a whole day passes by us without even realizing it. We go through mixed emotions in a day, fast paced times then to slower times and it is hard to stop and just be happy to be alive. I was drinking my smoothie the other day and on the top of the lid it said “Smile.” It reminded me that no matter where I am or what I am doing it is never hard to take a deep breath and smile. Remind yourself that you are happy and lucky to be on this earth. A smile is a simple reminder to yourself showing you that you are grateful to have a heart that beats. Whether you are having a good or bad day, take 2 seconds out of your schedule to stop and smile. It will make you feel better and the best part of all is that smiling is contagious. You will be making others happy too. 

Time to Spice Up Your Life!

Feeling like you are in a rut? Do you feel bored with life and constantly stuck? Sometimes we reach a point in our lives when we feel as though we can’t move. Can’t go forward and you can’t go back. Everything looks the same, you are caught in your daily routine and you want to feel that joy again. One thing I do know is humans thrive off new experiences. We can’t stand being bored and the moment we get into a rut our whole moods changes. Maybe you are sick of your job or are stuck in a situation that doesn’t bring you any happiness. My advice to you is to take that leap of faith and try something new. Variety is the spice of life they say so why not break out of your comfort zone and join a new club. Cooking class, tennis lessons, whatever it might be try something new and you may actually enjoy it. I started doing yoga back in the Fall because I felt I had reached a stagnant point in my life. Ever since then I have continued to try new things and flourish. So let go of all fears, go out have some fun and SPICE UP YOUR LIFE!

They have been hiding for quite some time. The world of music has come to a complete stand still. But then…Martin Garrix opened the cage and now they can’t be stopped. Running and roaring through the streets, the animals have been released. The song of the summer is out on Spinnin Records. Animals is the track that the EDM world has been waiting for. With a breakdown that will make you jump, move and get down, leading into a lively build up this track has everything. Right when you think things can’t get any better, Garrix throws in the drop and things get real. You have full permission to go crazy. Take a listen to this track, it is unreal. If your Monday isn’t that exciting, Animals will for sure give it the boost it needed.

Simple Sunday

Simple Sunday

Hallelujah it is Sunday. Sunday to me is the most relaxing day of the week. This is probably because I get to do nothing all day long which for me is perfect. We all have such busy lives and schedules it’s nice to have one day a week where you can relax and do absolutely nothing. I truly believe it is very important for everyone to learn to slow down and unwind. Even if it is just one day a week make sure you find time to relax and have “me time” as they call it. Now what are some things you can do with your relaxing Sunday?

1) Sleep – This one seems so simple but I think it is the most important. Why not take a day to sleep and relax. Whether you are up partying on your Friday and Saturday’s or taking it easy your body will probably thank you for letting it rest and rejuvenate.

2) Read – Grab your favorite book or magazine and lie in bed and read for a couple hours. If you are like me and love being on the computer, there are tons of online blogs and reading that you can do as well. Reading helps you disconnect and live in the present moment.

3) Listen to Music – I usually get all caught up on new music on Sunday so that I have good driving to work music for the rest of the week. Take an hour out of your day to put new music onto your IPod.

4) Go for a Walk – Yes that is correct I didn’t say run or go to the gym. Working out is awesome and a huge stress reliever but sometimes we put so much pressure on ourselves to look good and get in that daily workout that I think Sundays are perfect for going on a long walk to clear your mind. Walking is good exercise and helps you think clearly and figure out what you have to get done for the week.

5) Get a Coffee – This might be one of my favorite things to do on a Sunday. Grab a coffee in a cute little coffee shop and catch up with a friend. It is so relaxing and you get to express how you are feeling and what is going on in your life. Thank god for coffee and friends.
