It’s official, you can make cake in a mug!

For those who don’t have an oven in their place or if you just hate using the oven, have no fear.. mug cakes are here! Now let me tell you, making a mug cake is as easy as brushing your teeth. All you have to do is either buy cake mix (which is what I did) or make the cake mix from scratch.

Follow the steps on the box and then make sure you whisk all the ingredients together so that there are no lumps in your cake mix. Once you have done that get out a large mug and pour about 1/2 of the mix into the cup. Make sure you don’t pour too much of the cake mix in because while in the microwave the cake rises quite a bit. You then put the mug into the microwave for a minute and 30 seconds the then the cake should be ready. Take it out test it with a toothpick or fork and if it still needs some time put it back in for 10-15 seconds. There you have it, a fast and yummy treat that doesn’t involve the oven.

Chilli That Will Knock Your Socks Off

Calling all spice lovers! I have a chilli for you that will literally knock your socks off. If spice is your thing then this chilli and you will get along great. It is a pretty easy recipe it just takes time to strengthen the flavour. The best part about this chilli is that you will have leftovers for days and the taste gets better as the days go on.

Ingredients:

1) Ground Beef (500 g)
2) 1 Large Onion
3) 1 Red Capsicum (Pepper)
4) 1 Green Capsicum (Pepper)
5) Kidney Beans (3 Cans)
6) Mixed Beans (1 Can)
7) Crushed Tomatoes (2 Cans)
8) Corn (1 Can)
9) 1 Carrot
10) 1 Celery
11) Chilli Powder (2 Tablespoons)
12) Cayenne Pepper (Half a Teaspoon)
13) Cumin (1 Tablespoon)
14) Grated Cheddar Cheese
15) Sour Cream
16) Salt n Pepper
17) Sourdough Bread
18) Butter

Start by cooking the ground beef and chopped up onion together in a large saucepan. Cook the meat thoroughly so it is completely brown (10-15 minutes). Cut all your vegetables into bite sized pieces then add all ingredients into pot except the celery, corn, sour cream and cheese. Cooking on medium heat, stir all the vegetables and spices together. Leave this to cook for about 45 minutes to an hour. Add the celery and corn into the pot during the last 10 minutes. Final steps are to dish the chilli into bowls, garnish with grated cheese and a dollop of sour cream then serve with your heated up sourdough bread and butter. You are now officially ready to enjoy your delicious spicy chilli!

Etto – Italian Street Pasta

If you are ready to be transported straight to Italy then make your way down to Etto in South Melbourne. Grab a table outside and twirl some delicious pasta on your fork in any shape or size you want. Whether you are into Bolognese, Napoli, Pesto or Alfredo there is something for everyone here. With a laid back atmosphere and quick wait times, the food will be in front of you in a matter of minutes. Wherever you are in Melbourne, there is no excuse not to get yourself to Etto and indulge in carbs galore. I love all types of pasta but I would recommend trying the Wagyu meatballs with a nice Napoli sauce over your choice of pasta.

Fresh Organic Smoothies

Healthy food and drinks can be quite daunting to people when they have grown up on Kraft Dinner, chicken nuggets and cupcakes but for all those worried they won’t like a healthy organic smoothie let me reassure you, if I can drink one and enjoy it, so could you. Now let me first start by saying, yes there are a lot of crazy ingredients you will probably roll your eyes at but once everything is blended together it is quite a delicious and healthy alternative from your regular milkshake. Smoothies are good to have for breakfast, snacks, and they are packed with nutrients and they taste great! I have recently discovered a delicious little place called Combi that understands exactly what people want when looking for a smoothie. Not only do they look good, they are so healthy you wouldn’t believe it and everything they use is organic. I am always in search of cute places to eat and so for someone like myself Combi is the perfect place. For all those who are not lazy and could make these delicious smoothies themselves here is the recipe for my favourite smoothie called “Liquid Passion.”

Liquid Passion:

Passion fruit, berries, mango, coconut
flesh, raw fermented protein powder,
house made nut mylk

Honey South Melbourne – Restaurant Review

Walking up to Honey I noticed a bouncer standing outside, and to my surprise Honey was more than just one of South Melbourne’s most popular restaurants. It was a bar with killer music, crazy decor and an incredibly lively atmosphere. With young people drinking and mingling it made it the perfect place to people watch and enjoy a cold beer. We first started with their lemon, salt n pepper calamari which was so tasty due to the aioli drizzled along the plate. We then devoured a classic Aussie Chicken Parmigiana that left our bellies too full to even walk out comfortably. I snuck up to the bathroom to check it out and noticed that they had a private room for functions which also looked great. With the AFL playing, the music just right and the beers and food tasting fabulous, Honey in South Melbourne exceeded my expectations.

Simple & Delicious – Weekend Pancakes

Weekend pancakes are what I look forward to every Saturday and Sunday morning because it makes the entire weekend more delicious and fun. It makes it an extra treat to wait to do these on the weekend because you can sleep in, wake up then dig into these fluffy treats that will leave your mouth watering! If you usually have cereal or toast for breakfast during the week, I find that it is extremely fun to mix it up with these on the weekends.

Ingredients

1) 1 cup of self raising flour

2) 1 large egg

3) 1 cup of water

4) 1 table spoon of sugar

5) 1 banana

6) 40 grams of chocolate (milk, white, dark, whatever you feel like)

7) 5 strawberries

8) maple syrup

9) jam

10) butter

11) icing sugar

First you must grease the pan with a bit of butter for less stick and better appearance. Then mix water and flour together in a bowl and whisk thoroughly. Then add your egg and gently whisk through until all clumps of flour have dissolved. Then add your finely sliced banana or strawberries into the batter and mix through. You are welcome to go ahead and add in your crushed chocolate or you can wait to use it as a garnish on top. Cook on low to medium heat on frying pan for about 2 minutes each side. When bubbles start to appear on entire top of pancake then you know it is ready to flip, make sure you always check. Add maple syrup, butter, fruit, chocolate and jam for a nice garnish on top, and then you have the best morning treat there is.

Simple & Delicious – Stir Fry

Full of colour and oozing with flavours, this dish is definitely one to please. This delicious meal can be cooked in 15 minutes tops and is probably the most flavorful dish you can get. Asian flavours make this dish a stir fry that will keep your taste buds sizzling.

Ingredients:

1) Hokkein or Singapore Noodles (Noodles of your choice)
2) Chicken Breast
3) 1 large onion
4) 1 Broccoli
5) 1 Carrot
6) Handful of Green Beans
7) Cherry Tomatoes and Peppers are optional
8) Teriyaki sauce, Kung pao sauce or some type of Asian flavouring for your dish.

For starters, cut up the chicken in bite sized pieces and start cooking it in your frying pan on the stove. Add your cut up onion and mix with chicken until chicken starts to brown. Cut up your broccoli, carrot and green beans into bite sized pieces. To make sure your vegetables are well cooked, boil them in hot water first for about 5 minutes before adding to the frying pan with the chicken and onion. Mix the chicken, and vegetables all together in the frying pan and add your sauce. Now it is time to cook your noodles by adding them to a pot of boiling hot water on the stove. Cook them in the hot water for about 3 minutes then drain water. You can then add the noodles to the frying pan and mix everything thoroughly. Another option is to put noodles on plate then add chicken and vegetables nicely on top of the noodles for a more polished look. You are welcome to garnish with sesame seeds or add some hot sauce for an extra kick!

Simple & Delicious

Looking for a quick and easy lunch idea? This meal takes no longer than 10 minutes and you won’t be sacrificing taste either. Baked beans, toast with a fried egg on top and garnish the plate with some nice sliced tomatoes and you got yourself a healthy and delicious lunch.

Ingredients:

1) Can of Baked Beans
2) Bread of Your Choice
3) Eggs
4) Butter
5) Tomatoes
6) Salt n Pepper

To make this meal all you have to do is fry an egg on the stove and at the same time cook your baked beans in a pot as well. Throw in a piece of bread into the toaster then butter it once it is done. Once the fried egg is done, place the egg on your buttered toast and the baked beans beside it on the plate. Garnish with some juicy sliced tomatoes then add some freshly cracked salt n pepper on top for flavour! There you have it, a simple and delicious meal in under 10 minutes.

Simple & Delicious

This recipe is absolutely the best and you will be adding it to your weekly dinner routines as soon as you try it. Since I am not much of a cook I’m lucky to have my boyfriend Nick Thompson cook up lovely recipes that are all so delicious you will be wanting more. This recipe is spaghetti bolognese and was passed down to him from his mom and is a weekly tradition in our house.

Ingredients:

1) A package of ground beef
2) Can of crushed or diced tomatoes
3) 1 large onion
4) Can of tomato paste
5) Tablespoon Sugar
6) Teaspoon Nutmeg
7) Pasta of your choice (spaghetti works best)
8) Pinch of Salt n Pepper

To make this dish you must start by browning the ground beef with the onions in a frying pan until the beef is 100% cooked through. Cook the onions along with it for flavor then add the can of crushed or diced tomatoes along with the can of tomato paste. Stir all the ingredients through and then add your sugar, nutmeg and salt n pepper for flavor then mix through. Let sauce simmer for 2 hours, the longer this dish cooks the better it tastes. Continue to check on it within the 2 hours stiring every 10 minutes then cook your pasta to your liking add it to the sauce then top it off with some Parmesan or cheese of your choice. Trust me this is a dish you have to try!

Eat of The Week!

Eat of The Week!

Coming in as number one for eat of the week is the succulent `Red Burrito.` I set a new record on finishing this burrito in less than 5 minutes which is quite shocking if you knew how big it really is. It was my first time eating at the famous burrito joint positioned on Commercial Drive and East 1st. It was quite the experience on my lunch hour from the moment the clock turned 12pm my coworkers and I hustled to my car preparing ourselves for this burrito that awaited us. Vancouver is known for having a wide array of dining options so I am quite lucky when it comes to doing my favorite thing which is eating. Once we made it to the `Red Burrito` we looked up at the very simple menu which consisted of chicken, veggie, pork or beef. You picked your option and then created your burrito like it was a Subway sandwich. Now since I attempt on cutting down my meat intake I got veggie but obviously loaded up with salsa and a little extra of everything. My two coworkers got chicken and their burritos barely closed they were so fat. Once we hurried back to the office I ran through the doors almost hitting people as I raced to my desk. This was clearly an eating emergency! Food this good had to be devoured in less than 10 minutes. Much to my surprise I finished it in 5. Whether you live in Vancouver or are passing through, this hidden gem of a burrito place is a must have.
